Now, for one of my in-law family's favorite meals: Tacos de papa. We make it for the week, for birthdays, and for everything in-between. It's always been one of my favorite recipes and I can't wait to share it with all of you!
Ingredients:
Pork Chuck
Beef Chuck
11 Potatoes
5/8 of White Onion
5 Roma Tomatoes
2 Tomatillos
1 Jalepeno
11 Arbol Chiles
2 Tbsp. of Menced Garlic
Salt and Pepper
Small Tortillas
Vegetable Oil
Lettuce, Shredded
Instructions:
Boil the pork and beef in a large pot over medium heat with half an onion.
Boil the potatoes in another pot over medium heat.
Once both are cooked and fork tender, peel the potatoes and shred the meat (save the water from the pot) into a large bowl.
Then I like to make the salsa by boiling together 4 tomatoes, the tomatillos, the jalepeno, and arbol chiles. Then blending it all together with some salt and pepper.
Then use the other 1/8 of onion, other tomato (cubes), and menced garlic into a pot to cook. Then mash together.
Add into the pot 1/2 of the juice from the meat pot.
In a small bowl, mix together some more salt, pepper, and garlic. Add it all to the pot. And mix it all together.
In a pan, heat up a large amount of oil in a pan over medium heat.
Form the tacos one by one by spooning in the mixture into a tortilla and immediately putting it in the oil. Let it cook until golden brown on both sides. Continuing with the rest of the tortillas/mixture.
And serve with shredded lettuce and salsa!
