Hey y'all! Today I wanted to share one of our bi-weekly go-tos: Sopes. Something super filling, yummy, and cheap.
Ingredients:
Pork
1 Package of Queso Fresco
1/2 of Cabbage, Shredded
Pinto Beans
4 Cups of Maseca
3 Cups of Water
Vegetable Oil
Ziploc Bag
Instructions:
To start off the dinner, I like to make my pinto beans. I usually let them soak in a pot to where they take about 1/4 of the space and fill the rest with water for at least two hours. Sometimes overnight so that they soften properly.And then set them to boil around 2 so that they are ready by 5 (3 hours of cooking).
Start making your sope "dough" while your plancha heats up by mixing together 4 cups of Maseca with 3 cups of water. You may have to add either of the elements if too soft or too dry. You'll want the consistency to be soft but not enough to stick to your hands too much.
Then you are going to form little balls, about 2 inches in size, place them onto your Ziploc (I cut the sides down so that there still only one crease together). And then press firmly with an object (I use a plate) to flatten it out into a nice circle about the size of a small plate.
Place them onto the plancha one by one. I can usually fit about 6 at a time.
Let them cook just a little on each side, not to the point of cracking by just slightly brown. Take them off and immediately fold the side slightly to create a little wall. And place to the side to cool.
As they take their turns on there, you can prepare the meat by cutting it into small cubes and fry up in a pan with oil.
Around this time, your sopes should be all formed and cooled. Now you'll want to heat a pan with lots of oil over medium heat. Once hot, fry up all of your sopes until golden borwn. I like to do about three at a time. Placing them into a bowl with paper towels to catch the oil once done.
To make to mashed beans, add some oil into a wide pan over medium heat. Once it heats up add in the beans with the water. Once they boil, mash and leave them on low heat until ready to serve.
Also cut up your cabbage and crumble your cheese.
Now your sopes should be ready to put together. My husband like it with just beans, queso, and our favorite salsa on top. While I like everything - putting on some beans, queso, meat, cabbage, and topped off with some salsa.
