Ingredients:
2 Eggplants
2 Zucchinis
2 Yellow Squash
6 Tomatoes
2 Tbsp of Oil
4 Garlic Cloves, Minced
2 Bell Peppers, Diced
1 Onion, Diced
1 Tbsp of Salt
1 Tbsp of Pepper
20 oz. can of Crushed Tomatoes
2 Tbsp of Fresh Basil
2 Tbsp of Fresh Basil
1 Tsp of Garlic, Minced
2 Tbsp of Fresh Parsley
2 Tsp of Fresh Thyme
4 Tbsp of Oil
Instructions:
Prepare the eggplants, zucchini, yellow squash, and tomatoes by slicing them all into thin slices.
In a pan, cook together the oil, garlic, bell peppers, onion, salt, pepper, crushed tomatoes, and basil.
In an oven pan (preferably circular), layer in the sauce at the bottom the veggies (alternating into a pattern).
Then in a bowl combine the basil, garlic, parsley, thyme, and oil to place over the top.
Bakr at 375 degrees for 1 hour covered by foil and 20 minutes uncovered.
