One of my favorite dishes to make during the winter time is posole. It’s warm, filling, and is super easy.
Ingredients:
Pork Shoulder
1 Tbsp of Salt
8 Garlic Cloves
1/2 of an Onion
1 Big Can of Hominy (or 4 Small Cans)
10 Guajillo Chiles
1 Tbsp of Salt
1 Garlic Clove
3 Bay Leaves
1 Tsp of Cumin
Instructions:
Start by boiling a big pot of water.
Add in the meat (cut into bite sized pieces), salt, garlic, and onion. Letting it cook on medium-high heat for 3 hours.
As it cooks, add the chiles to a bowl of warm water to soften.
After the three hours, add the hominy to the pot. Cooking for another hour.
Blend together the chiles, salt, and garlic. Straining it into the pot along with the bay leaves and cumin. And letting it cook for one more hour.
Serve it up with toppings of cabbage, radishes, serrano peppers, onion, cucumber, oregano, and tortilla chips.
