Lumpia Recipe

Lumpia is a traditional Filipino dish that is our version of the egg roll. It is something that can be served as a side dish or as an appetizer. In either case, it is always sure to make a hit at a party!

Ingredients:

- 4 Lbs of Ground Beef

- 1 Tbsp of Pepper

- 1 Tbsp of Salt

- 9 Oz bag of Bean Sprouts - 2 Small Bags of Three Color Coleslaw (red onions picked out)

- 4 Tbsp of Minced Garlic

- 1 1/2 Small Bags of Frozen Peas and Carrots

- 1 Cup of Vinegar (preferably apple cider vinegar)

- 1 Cup of Soy Sauce

- 1/2 Cup of Flour

- 1/2 Cup of Water

- 6 25-sheet Packages of Lumpia Wrappers

- Vegetable Oil


Directions:

1. Place all of ground beef into a huge pot. Season it with the salt and pepper. Let it simmer of medium-high heat until beef is about half-way cooked. 2. Add in bean sprouts, coleslaw, and garlic. Stir all together. And cook until meat is just brown. 3. Add in the peas and carrots, vinegar, and soy sauce. Cook on medium heat until peas and carrots have thawed. 4. Transfer all of the meat into a separate bowl, making sure to separate it all from as much of the grease as possible (the grease will make the wraps tear easier as you begin to roll). And then set aside.

5. As your meat cools a little, mix in a small bowl together the flour and water. It’s going to form a little paste. You don’t want it too liquidity or too thick. And careful peel apart the wraps from one another, placing them on a separate plate. 6. Lay out one lumpia wrapper in a diamond shape and spoon 1 tablespoons of filling at the bottom of the wrapper, leaving about an inch and a half (3 cm) of space from the bottom point. Fold the bottom point over the filling, then fold in the edges to create an envelope shape. Roll the wrapper toward the top point. Brush the top point with the flour mixture.

7. Heat up the oil in a frying pan. Carefully place four to five lumpia at a time in the hot oil. Frying on each side for 1-2 minutes, or until golden brown.

8. Remove the lumpia from the oil and drain on a wire rack or paper towels.

9. Serve alone or with a side of sweet chili dipping sauce. 10. Enjoy!

*If you are not going to fry the lumpia on the same day as they are folded, place them in a zip loc bag to put in the FREEZER until you are ready to heat them up!*
