Lemon Chicken

This is something that I make every Sunday for my husband‘s lunches. It’s super easy, packed full of flavor, and can be paired with so many things.

Ingredients:

  • 2 Chicken Breasts

  • Salt

  • Pepper

  • 1 Cup of Flour

  • Oil

  • 5 Lemons


Instructions:

  1. Clean chicken and slice in half (length wise) to make two pieces of chicken.

  2. Tenderize the chicken to make it a little flatter.

  3. Salt and pepper each side of the chicken to your liking.

  4. Place coat the chicken in flour on both sides.

  5. Fry on each side in a pan with hot oil for about 8 minutes on each side on medium heat.

  6. Once cooked, add in the juice of 4 lemons and let the juice reduce (flipping the chicken half way through).

  7. Top with slices of the other lemon.

  8. Enjoy with some rice, in a burrito, or however else you like lemon chicken!
