So I just started working out and doing the keto diet (hence why you will see a lot of keto recipes) and I have to say, this is my favorite one so far! It was so delicious, easy, and tastes just as good as regular lasagna.
Ingredients:
FOR THE NOODLES
Cooking Spray
2 (8 oz.) Blocks of Cream Cheese
6 Eggs
4 Cups of Shredded Mozzarella
1 Cup of Shredded Parmesan
Salt and Pepper
FOR THE FILLING
2 Tbsps. of Olive Oil
1/2 Yellow Onion, Chopped
5 Garlic Cloves, Minced
2 Tbsp. of Tomato Paste
2 Cups of Marinara Sauce
2 Tsps. of Dried Oregano
1 Tsp. of Red Pepper Flakes
1 (16 oz.) of Ricotta
2 Cups of Shredded Mozzarella
TOPPING
1 Cup of Shredded Parmesan
Fresh Parsley, Chopped
Directions:
Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper and spray with the cooking spray.
In the microwave, melt together the cream cheese, mozzarella, and parmesan. Once done, immediately stir in the eggs. Mixing until fully combines. Finish this part off by seasoning it all with some salt and pepper, then spreading it on the baking sheet evenly. Baking for 15-20 minutes or until a beautiful golden brown.
As it cooks, add oil to a skillet over medium heat. Add in the onion, cooking until soft. Then cook in the garlic and tomato paste.
Add all of the beef to the skillet, seasoning it with salt and pepper. And cooking it fully brown. Then drain it.
Return the skillet back to the stove, adding in the marinara, more salt, more pepper, and the red chili pepper flakes to the beef mixture.
At this time, your "noodles" should be done. Let them cool for a little, then cut them into pieces by cutting it all into half and then those halves into threes.
Make the lasagna by spooning a little bit of marinara sauce on the bottom of an oven-safe pan. Then place two of the noodles on the top, some ricotta on the top of that, then the meat mixtures, and then top it off with a layer of mozzarella. Repeat the layers two more times. Topping the whole thing off with parmesan.
Bake the whole thing for about 30 minutes and garnish with chopped parsley.
