Enchiladas Rojas

One of my favorite and easy recipes is enchiladas. It doesn’t take much time and effort. Is delicious. And can be made from left over salsa.

Ingredients:

  • 15 Guajillo Chiles

  • 2 Ancho Chiles

  • 20 Chiles de Arbol

  • 4 Garlic Cloves

  • Dash of Salt

  • Small Tortillas

  • 3 Packs of Queso Fresco

  • Vegetable Oil

Instructions:

  1. Remove all of the stem and seeds from all of the Chile’s. Then place them all into a pot with water and the garlic to boil.

  2. As it boils and they soften, crumble up all of the cheeses together into a bowl.

  3. Then blend all of the Chile’s with the water together. And strain the sauce into a bowl.

  4. In another pan, heat some oil over medium heat.

  5. Dip the tortillas, one by one into the sauce and fry in the pan for a few seconds on each side (no longer or else they get super soft and tear).

  6. Remove from the oil, letting the oil drip off as much as possible.

  7. Lay it flat on a plate, add some queso fresco, roll it up, and enjoy with some rice and beans.

*You can also use the sauce to make chilaquiles. Just cut up tortillas into fours, fry them up in some oil until hard like chips, add in the sauce, and crumble some cheese on the top!*
