Cauliflower Mac and Cheese


This was another thing I was so excited to make to add into my recipes of my Keto-friendly diet. And it did not disappoint!


Ingredients:

  • 2 Lbs. of Frozen Cauliflower Florets

  • 1 Cup of Heavy Cream

  • 4 Oz. of Cream Cheese

  • 8 Oz. of Shredded Cheddar Cheese

  • 1 Tsp. of Turmeric

  • 1/2 Tsp. of Garlic Powder

  • Salt

  • Pepper

  • 2 Tsp. of Dijon Mustard

Instructions:

  1. Cook the cauliflower according to the package.

  2. In a pan, bring the heavy cream to a simmer on medium heat. Then mix in the cream cheese until it is smooth.

  3. Add in the cheddar cheese until melted.

  4. Add in the mustard, turmeric, garlic, salt, and pepper.

  5. Drain off the cauliflower and add to the cheese sauce. Covering it all completely.

  6. Serve as a side to your favorite keto dish and enjoy!
