Want an easy Mexican dish that you can cook in the crockpot? Well then carnitas are for you!
Ingredients:
3 Oranges
1 Lime
1 Lemon
5 Garlic Cloves
1 Tbsp of Oregano
1 Tbsp of Peppercorns
Dash of Cinnamon
1 Tsp of Onion Powder
1 Tsp of Cumin
1 Tsp of Chili Powder
1 Tbsp of Salt
1 Tbsp of Sugar
1 Cup of Oil
1/2 Bottle of White Wine
Pork Butt
Oil
Water
3 Bay Leaves
Instructions:
Blend together the skin of 1 orange, juice of all oranges, juice of lime, juice of lemon, garlic, oregano, peppercorns, cinnamon, onion powder, cumin, chili powder, salt, sugar, oil, and wine.
Combine it into a ziploc with the pork. And refrigerate overnight.
Cook in an oiled crockpot on high with water (to cover it) and bay leaves for 4 hours.
Shred and eat as is or crunch it up a bit by adding it into a pan with a little oil.
Serve as a taco with some pico de gallo with rice and beans in the side!
*Pico de gallo is just a mixture of diced tomatoes, jalapeños, onion, garlic, cilantro, lime juice (2), 1 Tbsp of salt, and 1/2 Tsp of cumin.*
