Breakfast Casserole


Ingredients:

  • 1 Bell Pepper, Diced

  • 1/4 Onion, Diced

  • 3 Garlic Cloves, Minced

  • Chorizo

  • 10 Eggs

  • 1 Cup of Milk

  • 1 Tsp of Cumin

  • 1 Tsp of Salt

  • 1 Tsp of Pepper

  • Thing of Salsa Verde

  • 18 Small Tortillas

  • Can of Corn

  • Can of Pinto Beans

  • Shredded Cheese


Instructions:

  1. In a pan, cook together the bell pepper, onion, garlic, and chorizo.

  2. As it cooks, combine the eggs, milk, cumin, salt, pepper, and salsa verde.

  3. Form the casserole in a baking pan by laying down 6 tortillas, 1/3 corn, 1/3 chorizo mixture, 1/3 beans, and 1/3 egg mixture. Repeating twice.

  4. Top it all with cheese, cover in foil, and bake at 350 degrees for 1 hour.

  5. ENJOY!!!!
